Sushi Rice
To make sushi rice you need to make rice and 'sushi vinegar'. The vinegar can be made either using the recipie below,
or you can buy a powdered sushi mix instead.
4 tbsps | Rice Vinegar |
4 tbsps | Sugar |
2 tsps | Salt |
This will make enough sushi vinegar for 3 cups of rice, and can be prepared whilst the rice is cooking.
In a small pan mix the rice vinegar, sugar and salt.
Heat this slowly, and stir until all the sugar is disolved, then let the mixture cool down.
Sushi Ginger Gari
Normally gari would be bought, but it can be made at home.
250g | Ginger |  |
100ml | Rice Vinegar |
2 tbsps | Mirin |
2 tbsps | Sake |
5 tsps | Sugar |

Peel the ginger and then blanch for 1 minute. Slice the ginger as thinly as possible.
In a small pan put the vinegar, mirin, sake & sugar and bring to the boil, stirring until the sugar disolves. Then let the mixture cool down.
Place the ginger in a sterilized jar and pour in the mixture.
The pickled ginger will slowly turn pink. It should be left for a few days before use.
